This soup is super easy to make and is the perfect companion to our Tikka Grilled Cheese (or any grilled cheese)! If you’re cooking for one or two, just cut the ingredients in half.
Stock your pantry with San Marzano tomatoes and you can make our Simple Tomato Soup in less than 30 minutes whenever the mood strikes. (And don’t miss our recipe for Tikka Grilled Cheese Sandwiches!
1 large onion or a few small-medium shallots, roughly chopped
2 28 oz. cans whole tomatoes, no basil (we prefer San Marzano)
2 TBSP extra virgin olive oil
2 TBSP butter (optional)
1 teaspoon salt
Salt and pepper to taste
Heat olive oil in a medium-large saucepan* over medium-low heat, add onions (or shallots if using) and salt and sauté until translucent, about 10 minutes.
Add tomatoes and bring to a boil.
Reduce heat to low, stir in butter and season with salt and pepper to taste.
*We find a larger pan, like a Dutch oven, easier to blend in—less splattering!
