Simple Tomato Soup

This soup is super easy to make and is the perfect companion to our Tikka Grilled Cheese (or any grilled cheese)! If you’re cooking for one or two, just cut the ingredients in half.

Shopping List & Prep (serves 4)

  • 1 large onion or a few small-medium shallots, roughly chopped
  • 2 28 oz. cans whole tomatoes, no basil (we prefer San Marzano)
  • 2 TBSP extra virgin olive oil
  • 2 TBSP butter (optional)
  • 1 teaspoon salt

Cooking Directions

  1. Heat olive oil in a medium-large saucepan* over medium-low heat, add onions and salt and sauté until translucent, about 10 minutes.
  2. Add tomatoes and bring to a boil.
  3. Reduce heat to low, stir in butter and season with salt and pepper to taste.
  4. Simmer over low heat, stirring occasionally, 10 minutes. 
  5. To serve, either puree in blender or in pot with immersion blender.

*We find a larger pan, like a Dutch oven, easier to blend in—less splattering!
