What we love about this recipe is that it has all the ingredients of a classic Japanese Curry, but in the form of a meatloaf! The other great thing about this recipe is that you really can’t mess it up — it comes out moist and delicious no matter how long we overcook it. The vegetable quantities should be thought of as guidelines — don’t worry if you have a little more or less garlic, onion, carrot, spinach, parsley, or apple than called for. Oh, and if you want to do this right, you gotta serve with mashed potatoes!
