Bread and cheese have become major food groups in our house over the past several months. In thinking of ways to make things more interesting, we came up with another recipe that we’re wondering why we didn’t think of before: pizza with a Thai twist. Yummers!
Our sauce for our Thai Pizza was inspired by one of our latest obsessions—the cilantro chutney we created for our Tikka Grilled Cheese Sandwiches. (In fact, we may just start slathering this Thai Pesto on grilled cheese as well. But it would also be great on pasta with some grilled shrimp. The possibilities are endless!)
Shopping List & Prep
Thai Pesto
1 C tightly packed Thai basil leaves (regular basil also fine)
1 C tightly packed mint leaves
1 C tightly packed cilantro
2 cloves garlic, peeled
Juice of 1 lime
1.5 TBSP Masi Masa Thai Green Curry Spice Blend (there are ~3 TBSP in a pack)
1/4 C peanuts, walnuts or cashews (unsalted best)
1 TBSP fish sauce (optional)
1/4 C olive oil
Pizza & Toppings
Feel free to get as creative as you’d like with your topping. Cherry tomatoes, broccoli, potatoes, eggplant, spinach...anything you’d find in a Thai curry could work! The trick is to use vegetables that will cook on top of the pizza in the 8-12 minutes it will be in the oven. For veggies that take longer to cook, we suggest pre-cooking them till they’re about halfway done first.
1 large carrot, peeled and cut into matchstick-sized strips
1/2 red bell pepper, peeled and cut into matchstick-sized strips
12 or so spears of asparagus, sliced on the diagonal*
1 1/2-2 C grated mozzarella cheese
1 ball prepared pizza dough
Cooking Directions
Remove pizza dough from fridge and bring to room temperature at least one hour before assembling pizza
Make the Pesto
In a food processor, pulse the garlic until minced
Add basil, mint and cilantro, pulse until finely chopped
Add lime juice, fish sauce, and 2 TBSP Masi Masa Thai Green Curry Spice Blend and pulse until combined
Slowly add oil through chute with processor running until ingredients form a paste
Set aside
Make the Pizza
Preheat oven to 450°
Grease baking sheet with a little olive oil (we like using a sheet pan)
Roll or stretch pizza dough out the best you can
Bake for 5 minutes, remove from oven
Spread pesto evenly on top of dough being careful not to miss a spot
Sprinkle two-thirds of the cheese over the pesto
Add your toppings
Sprinkle rest of cheese on top
Bake for 8-12 minutes (baking time will depend on how thin you got your crust)
This is one of the most strangely delicious mashups we’ve ever tasted. We’ve created two versions—one with chicken and vegan/vegetarian. Try them both!
This tried and true favorite takes no time to prep (less than 15 minutes) and there’s no need to turn on the stove or oven, because it’s all done in your rice cooker!
